Baked Fig with Goat Cheese and Lavender Honey

Pelindaba Lavender Gourmet Honey made from our own organic lavender flowers


Quarter fresh figs and lay them on a dish that can be placed in the oven.
Sprinkle the open side with fresh goat cheese.
Bake until warm and slightly golden on top.
Take out of the oven and drizzle with our Lavender Honey .
Serve as an appetizer or tea time snack.

Lavender Cranberry Sauce

Pelindaba Lavender Organic Culinary Lavender


3/4 cup water
3 cups washed cranberries
1 cup sugar
2 tsp Pelindaba Organic Culinary Lavender

Combine water and sugar and bring to a boil.
Add cranberries and bring to a boil again.
Lightly grind lavender and place in a cheese cloth bag.
Add lavender bag to sauce and cook over medium-low heat until berries have split (10mins).
Remove lavender bag and blend sauce.
Serve as a condiment with turkey, duck, pork, etc.

Lavender Balsamic Vinaigrette

Pelindaba Lavender Gourmet Honey made from our own organic lavender flowers


1 teaspoon Lavender Honey
1 1/2 cups balsamic vinegar
2 teaspoons Organic Culinary Lavender
2 tablespoons extra-virgin olive oil
Lavender Gourmet Salt and Lavender Gourmet Pepper to taste

In a medium saucepan, heat honey slowly until bubbling. Add vinegar and Organic Culinary Lavender and simmer over low heat until reduced to 3/4 cups (8-10 mins). Strain and allow to cool slightly. Whisk in the oil and season with Lavender Salt and Pepper.

Pork Tenderloin with Lavender Pepper and Apples

Pelindaba Lavender Gourmet Pepper


2 med pork tenderloin
1 Tbs Pelindaba Lavender Gourmet Pepper
4 cooking apples cut into eights

Pat pork tenderloin dry.
Roll in our Lavender Gourmet Pepper until evenly seasoned.
Place in a shallow roasting pan with apples and bake at 425°F until pork has a slight blush of pink in center or meat thermometer reads 160°F.
Let rest for a few minutes and serve.
